Paleo Meat Muffins recipe (makes 6 Big muffins)
Paleo Meat Muffins recipe (makes 6 Big muffins)
- 1/2 cups of Organic Coconut Flour
- 2/3 cup Tapioca flour or Almond Flour
- ½ cup Organic Raw Coconut Oil
- 8 organic eggs
- 3/4 cup Shredded Chicken
- 1/2 shredded medium onion
- ½ tsp Celtic Sea Salt
- 1 ½ tsp non aluminum baking soda
- 1/2 shredded Sheep Cheese (optional)
Mixture should be on the thick side. Mine looked like hummus.
Grease a muffin tin with coconut oil.
Pour batter into muffin pan, filling each muffin almost to the top.
Bake for 25-35 minutes, until the top is golden brown and a toothpick comes out clean.
Remove from the oven, then let cool for 15-20 minutes.
Wrap the muffins tightly and store in the fridge for 1 week. I actually think the muffins get better as the days go on.
